Last night was a nice reprieve, I didn't have to come up with any meal plan because we were invited next door for dinner, woo hoo! Tonight however I am making a dish that Scotty really likes, "Imperial Chicken" What's on your plate?

Last nights dinner was an all American favorite, or at least a Russell favorite on occasion... hamburgers! It was accompanied with Near Easts garlic roasted couscous and a nice salad.
I am still hoping to gather ideas from any of you that are willing to tell me what's on your plate tonight!

We had a very fine dinning experience last night. After a long hard day of working in the yard we opted for an easy but mighty fine dinner last night and invited our wonderful neighbors over to join us. On the menu, Trader Joe's marinated rack of lamb (found in the freezer section) cut the rack into individual chops and grill, yum! I also roasted some Yukon gold and new potato wedges drizzled with olive oil, sea salt and ground black pepper in our outdoor oven, served with a simple but delicious salad of butter leaf lettuce, toasted walnuts and apples in a light vinaigrette.

Tonight roasted chicken with rosemary sprigs placed between the skin and meat, drizzled with olive oil and sprinkled with salt and pepper...

Yum! the chicken pot pie casserole was just delicious, but I'm sure far from my goal of meals 400 calories and under, oh well comfort food is just sometimes too good!!! Also the Irish soda bread pictured here was quite yummy and even better toasted for breakfast!

Happy Saint Patty's Day!
I've already made my Irish Soda Bread and it smells yummy! Larry and the kids are not too crazy about Corned Beef so we're opting for a chicken pie casserole...I will let you know how it turns out. I will be serving it with a family favorite asparagus lightly coated in olive oil and sprinkled with sea salt and broiled to crisp perfection!

OK here goes a new recipe, wish me luck! It falls into the category I like to try and follow and that is meals 400 calories and under...I'll let you know if it is worthy of the post, I guess I should have done a post post instead of a pre post!

Beef Bok Choy Stew

Stewing beef meat - 1lb
Green onions (chopped) - 1 cup
Garlic (minced) - 1 clove
Ginger (minced) - 1 tsp
Bok choy (chopped) - 2 cups
Carrots (chopped) - 2 cups
Water - 2 cups
Beef broth - 1 cup
Rice vinegar - 1/4 cup
Light soy sauce - 1/3 cup
Sugar - 2 tbsp
Olive oil - 1 tbsp

Cooking Instructions
Cut the beef into bite sized chunks
Combine beef broth, water, vinegar, soy sauce, and sugar
Heat oil in a pot to medium-high
Add in the beef and brown all sides then add in the broth mixture along with garlic and ginger
Reduce heat and simmer for 1 hour or until beef is soft, then mix in the carrots
Simmer for another 15 to 20 minutes until the carrots are soft, then add in the bok choy
Cook for another 3 to 5 minutes until the bok choy is soft
Serve over brown rice

Let me start by saying that I am starting this blog for selfish reasons! What the hell do I make for dinner? I find that making dinner is not the issue, but what to make for dinner most definitely is!
I am talking about everyday dinners that can please the masses! Dinner's that won't take forever to make after a day of work, but something healthy, simple and tasty. Last week I had a fairly successful week of dinners, things that I don't normally make week in and week out. I will start with two of the dinners that went over pretty well:

Baked potatoes with turkey chili and topped with cheese ( you can add lots of other condiments such as tomatoes, peppers, sour cream, you get the idea) salad and tortilla chips.

Turkey meatball sub sandwiches, cooked spinach with olive oil and garlic, and a salad.

Now you can see what I mean...so start adding your ideas and start cooking!
