Tonight... slow cooked pork loin in brown sugar, balsamic vinegar with Dijon mustard sauce. The very last hour it is coated again with a mixture of brown sugar and cinnamon, it sure smells delicious! The meat will be accompanied by mashed potatoes and broccoli. What's on your plate?

OK sorry I've been out of touch for a few days! Last night we had chicken enchiladas...The chicken was left over from one I had roasted the other night. The enchiladas were dellish and gobbled up by the masses.
Some of you have been leaving comments, Yea!! But if you come across something worthy of sharing please leave the recipe if it is not too much trouble! Tonight I am trying a new soup recipe: Orange Scented Carrot Soup I am serving it with a salad and Grilled Black Forest Ham on Crusty Sourdough bread Panini's.

Last night was a nice reprieve, I didn't have to come up with any meal plan because we were invited next door for dinner, woo hoo! Tonight however I am making a dish that Scotty really likes, "Imperial Chicken" What's on your plate?

Taco Tuesday!!!

Last nights dinner was an all American favorite, or at least a Russell favorite on occasion... hamburgers! It was accompanied with Near Easts garlic roasted couscous and a nice salad.
I am still hoping to gather ideas from any of you that are willing to tell me what's on your plate tonight!

We had a very fine dinning experience last night. After a long hard day of working in the yard we opted for an easy but mighty fine dinner last night and invited our wonderful neighbors over to join us. On the menu, Trader Joe's marinated rack of lamb (found in the freezer section) cut the rack into individual chops and grill, yum! I also roasted some Yukon gold and new potato wedges drizzled with olive oil, sea salt and ground black pepper in our outdoor oven, served with a simple but delicious salad of butter leaf lettuce, toasted walnuts and apples in a light vinaigrette.
