OK sorry I've been out of touch for a few days! Last night we had chicken enchiladas...The chicken was left over from one I had roasted the other night. The enchiladas were dellish and gobbled up by the masses.
Some of you have been leaving comments, Yea!! But if you come across something worthy of sharing please leave the recipe if it is not too much trouble! Tonight I am trying a new soup recipe: Orange Scented Carrot Soup I am serving it with a salad and Grilled Black Forest Ham on Crusty Sourdough bread Panini's.

  1. I hear someone wanted the red pepper sauce-here:
    In a blender combine 1 roasted red bell (I use canned from TJ"s), 1 sweet hot cherry pepper(don't have, didn't use), 1 T. balsamic vinegar, 1 tsp honey, 1 tsp dijon, 1/4 t. salt puree then transfer to a bowl and whisk in 4 Tbls olive oil. Serve spooned over grilled halibut kebabs made with red onions and cherry tomatoes and serve hot fish on top of baby spinach w/ sauce spooned over-the halibut is marinated for 1 hour w/ 1 Tbls fresh lemon juice, 1 Tbls olive oil, and 2 Tbls chopped shallot. If served w/ 1/2 cup baby red potatoes, it = 410 calories. enjoy!
