Hi Julie, Couldn't stop thinking about your fun blog as I prepared dinner tonight, so thought I'd share. We got our weekly organic veggie delivery from River Dog Farms today, so I went bonkers on fresh veggies tonight. When I was in Brazil a few years ago I especially enjoyed various raw vegetable salads, so I have added them to our meals ever since. Tonight I made a salad by grating a large raw beet, thinly slicing a fresh fennel bulb and tossing them with minced spring onion, chopped walnuts, feta and some oil and vinegar. We also received our first bunch of fresh asparagus, so I stir-fried them with some mushrooms, leeks and thinly sliced beef. Thanks for sharing and inspiring healthy yummy dinners. Jeanne
Thursday always challenges me for some reason, so I've decided to dust off my old shrimp curry recipe. I love how you serve it with condiments and I already have cukes, green apples, coconut and I think I'll use cashews in place of peanuts. Cat's begging for white rice which is not very often in our house. Last night was halibut kebabs with an amazing red pepper sauce that's made in a blender and served with roasted baby potatoes. It's from the flat belly cookbook, under 400 Cal and I highly recommend it. I loved seeing that Larry doesn't like corned beef (same here, salt lick anyone?).
I have been married 26 years to my one and only. I have four amazing son's one beautiful daughter in law and another beautiful girl that will one day be part of the Russell family! I love hiking in the open space with the girls, reading, movies, camping with my family, awe heck what can I say life's good!
